Evaluation of fillet yield and composition of white pirapitinga (Piaractus brachypomus)

Contextualization: The white cachama is a native species, which has attractive properties and characteristics for both the producer and the consumer. Currently, the main studies. focus on captive reproduction, forms of feeding, genetic improvement, and management.

Knowledge gap: Information about fillet and carcass yield is minimal and cannot be strategically planned at the time of planting, as well as product diversification and insufficient information about the management of residues of this species.

Purpose: The objective of this research was to evaluate if there were significant differences in the performance of the fillet and the physico-chemical composition when comparing two sizes of white cachama commercialization, which are distributed in the main collection centers of the country.

Methodology: Body yields were estimated taking as a sample 92 animals, which were benefited, gutted, and classified into two groups depending on their weight.  Then they were scalded and cut off their fins, tails, head and skin. Subsequently, physico-chemical characteristics (proximal analysis and degree of oxidation by analysis of volatile,nitrogenous bases) were evaluated, and research related to the use of waste was reviewed.

Results and conclusions: Animals in the weight range of 406 g to 600 g had a yield in fillet of 51% and in carcass of 74%. Also, significant differences in lipid content were found, the other variables showed the same behavior between the groups. Finally, it is evidenced that the species presents limited investigations about the use of residues for the preparation of silages, hydrolysates and flours.
