Español Uv Spectrophotometry As A Reliable Method For Vitamin C Quantification

Vitamin C represents an essential micronutrient in the human diet, obtained from fruits and vegetables, characterized by its labile nature which requires a great deal of work for the quantification process and accurate study, so it has been necessary to determine the method of analysis that allows its adequate evaluation, highlighting in the literature the use of UV spectrophotometry for its measurement. This method is considered an easily accessible tool based on the absorption of light by a sample, which facilitates a simple and rapid measurement that allows obtaining high amounts of the bioactive compound with good sensitivity, as well as data on its concentration and identity, thus allowing its application in different fields of research, production, and quality control, especially in labile samples such as ascorbic acid in complex food matrices.
