Total carotenes in the species Cucurbita moschata AND Cucurbita maxima
The genus Cucurbita presents high variability between and within species, both in the fruit and in the seed; In the fruit, the pulp stands out for presenting shades ranging from yellow to orange, because the color of the pulp is an important feature to determine the carotenoid content. The objective of this study was to determine the total carotene content in two species of butternut squash Cucurbita moschata and Cucurbita maxima; A completely randomized design was used with 2 species and 4 treatments with 3 repetitions and the total carotene content was evaluated. It was identified that there are statistical differences between treatments, with the species C. moschata being the species with the highest content of total carotenes in pulp with 27.35 ug.g-1 on average on a fresh basis.
