Biotechnological trends and 4.0 technologies applied in food safety control
Food safety is defined by the World Health Organization (WHO) as the set of conditions, measures and tools to strengthen the economies of each country through food trade and guarantee food and nutritional security in the world. This document presents a short review of the latest trends in technologies implemented for food safety control, used mainly as part of safety control systems, which effectively seek to prevent, monitor and mitigate the risk of occurrence of foodborne diseases (ETAs). The related authors pointed out that the food supply chain must have the ability to use technological and biotechnological tools in combination with their available analytical methods, to make food systems more efficient, in such a way that it is more reliable to establish relations of trust. causality between contaminating sources, vectors and diseases or even deaths caused by said event.
