Native starch yield in two yam species Dioscorea sp.

The yam is a food resource of the genus Dioscorea, native to tropical and subtropical regions in the world, and two species Dioscorea alata and Dioscorea rotundata stand out. The objective of this study was to identify the native starch content in two species of yam Dioscorea alata (Creole variety), Dioscorea rotundata (Espino variety and Diamond variety), such that it can be used in agrobusiness processes; using a completely randomized with four (4) repetitions and the starch, dry matter and amylose content was evaluated. It was identified that there are no statistical differences between the varieties with respect to starch content with 21.7%, 22.8% and 19.7% for the Criollo, Espino and Diamante varieties, respectively.
