This research proposes the construction of a technological surveillance model for the strategic management of social, industrial and scientific research in the area of ​​food safety in Colombia. For this study, a data set was built that contains information related to the behavior of the food safety area in Colombia in documents published in high-impact journals indexed in the Scopus database, between the years 2000 and 2021. 113 documents were obtained. published in that period of time, highlighting the year 2020 with 23 publications coinciding with the COVID - 19 pandemic. In relation to the areas of knowledge of the publications, agriculture and biological sciences (25%), medicine (15.7%), immunology and microbiology (10.3%) and in fourth place environmental sciences (7.4%). Regarding the types of documents, it was found that the most common are research articles with 79.6%, followed by review articles with 10.6% and book chapters with 5.3%. On the other hand, the authors of these publications are linked to educational institutions such as the Universidad Nacional de Colombia with 15 documents, followed by the Universidad de Antioquia (8 documents), and finally the Corporación Colombiana de Investigación Agropecuaria Agrosavia (6 documents). In terms of sponsoring entities of the published documents, the Administrative Departamento Administrativo de Ciencia, Tecnología e Innovación (COLCIENCIAS) with 5 documents, followed by the Coordenação de Aperfeiçoamento de Pessoal de Nivel Superior (CAPES) (2 documents) and in third place the United States Department of Agriculture (USDA) (2 documents). The information obtained on the novelties and advances that occur in the area of ​​safety, allows a clear and broad vision regarding the evolution that has occurred in recent years and future perspectives.
