The work was carried out by taking samples of pineapple peel from the Las Mercedes sector in the road corridor between Villavicencio and Acacias in the department of Meta, where a total of 9 mobile sales points were found, the general strain on average 14.11 Kg of peel / day An experimental design 22 was used for the pectin extraction process with the combination of temperature and time variables, where it was found that the determining factor in the extraction of pectin by acid hydrolysis is temperature, giving a better performance at 90 ° C. The process of extraction and physicochemical characterization of the pectin obtained from pineapple peel was carried out in multipurpose laboratory 1 of the Universidad Nacional Abierta y a Distancia Nodo Acacias, where results such as the following were obtained: extraction yield of 1.15%, grade esterification of 45,324, soluble solids of 0.366 ° Brix, a titratable acidity of 0.0768 g of citric acid / 100 ml and a viscosity of 83,324 Cp. The results were compared with a commercial high methoxyl citric pectin sample, with which it was concluded that the pectin obtained from pineapple peel corresponds to a low methoxyl pectin taking into account the difference in the grade result. esterification for the two pectins
